We love clean eating and often try making new dishes from scratch. We have quite a lot of recipe books, but I’m not really one for following a recipe. I think of recipe’s more as a guide to something I might try. I don’t usually measure ingredients, I use whatever I think looks right, substitute ingredients for what I think will taste best and/or is a healthier alternative and hope for the best (most of the time it works out fine).
We’re conscious though that making healthy food that kids will love is a whole other issue.
A few months back, I was lucky enough to try out my kid-friendly cooking skills when I looked after one of my little cousins for the day. She was just over 1 at the time and able to eat a lot of things, but my biggest concern was making something that was healthy but would also appeal to her so we could both enjoy lunch together.
After a bit of thought, I decided on pumpkin soup. Luckily, it was a hit! She loved it so much she decided it was time to try her hand at feeding herself.
If you’re keen to try out this recipe, the ingredients are below (no measurements, as I mentioned I don’t tend to measure, just go with whatever looks like the right amount to suit your tastes). I hope your kids enjoy it as much as this little cherub did!
